Tiger nuts are picked for the elaboration of the horchata.

They are cleaned with loads of water to remove the dust of the tuber, and are put in water to soak.

Later, they are grinded with water, to make the process easier, and is left to soak.

Finally, the tiger nuts are pressed and the extract is sieved to obtain the main horchata, to whchi only sugar is added to its consume.
